Varieties of oils
Our oils are grouped in 3 olive varieties, each with its own characteristics and Designation of Origin: «Sierra de Cazorla», Picual and Royal. The Arbequina variety is a variety of olive trees originating from The Holy Land.
Differences between Spicy/Bitter and Mild
Spicy: A sensation that leaves oil in the throat after swallowing, normally found in the healthy oils, whose quality comes from the natural antioxidants of the oil and is characteristic of the young oils produced at the beginning of the harvest season.
Bitter: A sensation that leaves oil in the mouth, especially on the sides of the tongue, being characteristic of the first oils produced and synonymous with healthy, young, quality oils. It is also caused by the natural antioxidants of the oil.
Mild: Characteristic of mature oils produced in the second part of the harvest season, these being oils with a bitter and light spiciness
